Wine is one of those products that can be found in almost every home in the Western World, and thus it arouses constant interest for many areas of study. We decided to choose wine as our subject for our CEGEP final scientific project. First, some statistics on wine production world-wide to demonstrate the importance of this trade: There are 8 million hectares of vineyards in the world producing 62 millions tons of grapes each year. All those grape are processed according to the method presented later in this paper, and yield approximately 29 billion liters of wine each year (Encarta 2005). With those astonishing numbers on in hand one must wonders how it all began. Table of Content
